Course Descriptions (Spring 2012)

Food for Life by The Cancer Project
Designed by physicians, nutrition experts, and registered dietitians, each class includes information about how certain foods and nutrients work to promote or discourage cancer growth, along with cooking demonstrations of simple and healthy recipes that can be recreated easily at home.
Scientists have long been accumulating a large body of evidence on the influence of diet on cancer. Time and again, precious phytochemicals found in plant foods are credited with boosting immune strength and inhibiting disease progression. Along with protection from cancer, plant foods promote a healthy weight and help prevent other chronic illnesses such as diabetes and heart disease.
The goal of this program is to empower cancer survivors, their friends, and their family members and promote healthy eating with easy-to-implement cooking skills that turn every meal into a delicious dose of healthy nutrition.

Fruit of the Vine: Wine in the Making
This course will review both the world's and United States' history of the wine industry, explain genetics, wine regions and varietals, economics of distribution, and provide a tasting of different regional wines.

Digital Photography: There's more than Autofocus
Are you new to digital photography, or have you been using a digital camera and want to know more about how to take advantage of all its features? This course covers the basic rules of photography and helps you familiarize yourself with the equipment so that you can improve your photography skills. You will learn about f-stop/aperture, shutter speed, exposure, light, and the automatic and manual settings that you find bon your camera. In addition, you'll have the opportunity to share photographs that you take during class and learn to develop an analytical eye to help you take stunning photos.

The CATF Repertory: VIP Journey of Season 22
The course explores the challenges and successes of the Contemporary American Theater Festival's 2012 Season. Get "behind-the-scenes" tales of what happened on-stage and off; meet the artists involved and take a peek at the future of CATF in 2013. This course will be taught by CATF's Peggy McKowen & James McNeel. CATF 2012 Season tickets will be available for purchase.
